Cajun Smothered Cabbage is, in a word...INCREDIBLE. Cabbage is the star of this dish, and the backup performers are Andouille sausage and The Trinity. The Trinity in Cajun cooking is celery, green bell pepper, and onion. Throw in some garlic and chicken broth, and this medley produces heaven on the plate.

What Is Smothering?
Cajun Smothered Cabbage involves using a cooking technique called "smothering." Smothering is very similar to braising. Basically this is a one pot dish that is cooked covered over a low heat for around one half hour or so with some chicken broth. The cabbage, Trinity, and sausage is cooked for this extended amount of time which results in tender vegetables and incredible flavors!
So "smothering" really just means cooking it down. 😊

It's super easy to make this dish and it's all done in one pot which means easy cleanup!
You will need a very large pot or large skillet with a tight fitting lid, or a large Dutch oven (preferred). A head of cabbage, even a small one, packs a lot of cabbage so you will need a big vessel to cook this dish!
Turn your stove to medium heat and add the oil to your skillet or Dutch oven. Once the oil is hot, add the garlic and Trinity (green bell pepper, celery, and onion). Cook for around 3-4 minutes, stirring often, until soft.

Bring to the boil on medium-high heat, and then lower heat to a low simmer and cover. Simmer for around 1 hour. This is a time of MAGIC when the smothering occurs and the flavors are all melding together. 😋
Take a peek every once in awhile, giving it a stir during your checks. If the mixture looks dry at anytime, you can add a bit of extra broth.

- 2 tablespoon vegetable oil can use olive oil
- 1 small green cabbage around 1.5 lbs chopped
- 1 small onion diced
- 1 small green bell pepper diced
- 2 stalks celery diced
- 3 ts minced garlic
- 8 oz Andouille sausage cut into small pieces
- ½ cup chicken broth can use chicken stock if you prefer
- 1 tablespoon Cajun seasoning use your favorite Cajun seasoning! I used Nunu's
- 1 ts salt plus additional to taste
- 1 ts pepper plus additional to taste
